Air Fryer Keto Cheese Scones or Muffins
O. M. G. Get ready to blow your own mind with this super simple piece of heaven – the ultimate Air Fryer Cheese Scones or Muffins recipe – which is Keto, low carb and gluten free! These bad boys are soft and unlike keto oven scones I’ve made previously, not hard and grainy…..a much nicer recipe and more muffin like.
As they are cooked them in the air fryer they are soft, lush and ready in about 10 -12 mins, so the whole thing took me about 15 mins. Most importantly, don’t over mix them and you’ll ensure your scone / muffins don’t look like the elephant man. Also, leave them to set and cool a little once cooked, as these are really cheesy and gooey and need to firm up after cooking.
- 2 tbsp butter, melted
- 1 cup almond flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup grated cheese (I use mozzarella, but tasty or cheddar would be amazing)
- 2 large eggs
- 2 tbsp sour cream
Heat air frier at 200 degrees centigrade for 3 mins
Melt butter, add almond flour, baking powder and salt and combine.
Add eggs and sour cream and mix, then add cheese and combine. Remember not to over mix.
This is quite a wet recipe, so I recommend using muffin cases or silicon muffin cups OR place a circle of grease proof paper on your air frier tray and place 1/4 cup spoonfuls on the paper. Be prepared for flattish muffins though – and you’ll only have room for around 4 at a time.
I used silicon cups and cooked 4 at a time for around 10 – 12 mins at 200 degrees centigrade.
Should make 6-8 depending on your serving size.
Once cooked, leave to cool a little as the cheesy goodness needs to set.
Serve with butter and dance around experiencing great joy and mouthgasms.
