Easy Low Carb Chocolate Muffins

This recipe is AMAZING and if you omit the green onions and pop the mixture into mini loaf tins instead of a muffin pan, it makes the best mini bread loaves EVER! Great to keep in the freezer for when you need them!

Makes 6 standard muffins or 3 texan sized muffins

  • 2 tbsp butter
  • 2 eggs
  • 1/4 cup sour cream
  • 1/2 tsp vanilla essence
  • 2 tbsp stevia or your preferred spoon for spoon sweetener
  • 2 tbsp cocoa
  • 1 cup almond meal
  • 3/4 tsp baking powder

Set oven to 180 / 200 degrees celsius

Melt butter and add wet ingredients and sweetener to bowl, then mix together

Add dry ingredients and mix through

Place in muffin tray or mini loaf pans and cook for around 25 minutes or until spongey to the touch

Eat warm with loads of butter, or cool with vanilla flavoured cream and berries and enjoy!
