Easy Low Carb Savoury Muffins

This recipe is AMAZING and if you omit the green onions and pop the mixture into mini loaf tins instead of a muffin pan, it makes the best mini bread loaves EVER! Great to keep in the freezer for when you need them!

Makes 6 standard muffins or 3 texan sized muffins

  • 2 tbsp butter
  • 2 eggs
  • 1/4 cup sour cream
  • 1/4 cup green onions
  • 1 cup almond meal
  • 3/4 tsp baking powder
  • some salt

Set oven to 180 / 200 degrees celsius

Melt butter and add wet ingredients and onions to bowl, then mix together

Add dry ingredients and mix through

Place in muffin tray and cook for around 25 minutes or until golden and spongey to the touch

Eat warm with loads of butter and enjoy!
