Low Carb 90 Second Bread – EGG FREE

I love 90 second bread, but I hate the ‘egginess’ of it! Using Chia Seeds, I created a ‘Chia Egg’ which turns the 90 second bread into a delicious wholemeal style version! Its crispy, nutty and delicious!!!

  • 1 tbsp of chia seeds
  • 3 tbsp water
  • 3 tbsp almond meal
  • 1/2 tbsp psyllium husk
  • 1/2 tsp baking powder
  • 1 tbsp oil
  • Salt and pepper

Soak chia seeds in the water until they thicken and become gelatinous. This will take a few minutes and ideally the longer you leave it (up to around 20 minutes) the better.

Mix all other ingredients together thoroughly in a bowl, using a fork

Pour your chia seeds and water, now thickened, into your bowl and mix till it forms a ball. Finish mixing through with your hands and form mixture into a ball

Place on a plate covered with a little baking paper and flatten slightly

Cook in the microwave for 90 seconds on 100% power

Place on a griddle or grill and toast until crispy

Cover in your favourite toppings (smashed avocado is my fav!!) and enjoy!
